Healthier Mango Éclair Recipe

Ingredients

Working Method

Choux Paste

In a mixing bowl with a paddle attachment, mix all ingredients together at high speed for five minutes

Pipe in between 20-30 grams per choux


Mango Filling

Pipe in 25 grams per choux


Chocolate Custard

In the mixing bowl with a whisk attachment, mix the Cremyvit SR and water together at high speed for five minutes.

Melt the chocolate to 35ºC and pour it into the mixing bowl.

Pipe 15-20 gr per éclair.


Coating

Bring the Festipak and glucose to 80°C

Pour over the chocolate.

Use an immersion blender to create a good emulsion.

Use around 30-32°C


Assembling

Cut a long rectangular hole in the bottom of the éclairs, and pipe 25gr of Topfil Finest Mango 70% filling first, and then pipe 20gr of chocolate custard on top of the mango filling.

Warm up the chocolate coating between 28 to 32°C and dip the éclair into it.

Decorate it with dried mango stripes.
