Temper this composition till 31° C, put into an espuma sifon.
Put in a mold (bar) that is thin molded with Belcolade Selection Noir Pur Amer 73.
Leave to crystallize for 12 hours at a temperature of 16-18°C, humidity below 60%. Close the molds with tempered Belcolade Selection Noir Pur Amer 73.
