Working Method

Shortcrust Pastry
Mix all ingredients together to make a dough. Roll it down to 3.5mm. Shape the tart 6cm in diameter. Bake for 10 mins at 160°C.

Filling
Fill each tart with 15g of Deli Cheesecake. Bake for 8-10 mins at 160°C.

ASSEMBLING
Pre-soak the gelatin and water for at least 15 min. before using. Blend Topfil Apple 86% with emulsion blender and make a apple puree. Warm up the gelatin mass to 30°Cand incorporate apple filling. Pipe 30g of filling into a half sphere silicone mold of 5cm diameter and freeze. Demold an apple filling from silicone molds. Warm up the glaze between 35-40°C and apple the frozen apple half spheres. Set on top of cheesecake filled tart. Glaze each tart with Miroir Glassage Neutre and decorate with a small cake square and speculoos biscuit crumbs.

Dating back to the 19th century, the Irish Apple Cake is the most authentic Irish patisserie. Based on a bread recipe, sweetened with apples, the recipe has evolved over time to include sugar and spices. It is distinctive by it's rustic sugary top.
